Aberdeen Angus Beef Wellington

It all starts with the beef. At the centre is beautifully tender fillet from our home-reared Aberdeen Angus cattle, reared here on the family farm in Aberdeenshire and dry matured for 28 days. 

The fillet is carefully prepared and surrounded with a rich mushroom duxelles, parma ham and a crepe, before being wrapped in pastry and finished with its distinctive lattice top. 

Making a Wellington for eight from scratch is no small undertaking, which is precisely why we do the hard work for you. And then there's the moment you slice into it. We think Beef Wellington is at its best served medium, when the beef is beautifully rosy red against the crisp, golden pastry. Give it plenty of time to rest, then use a serrated bread knife to cut cleanly through the pastry and into generous, even slices.

Serving eight, this is one for the bigger gatherings: Christmas dinner, Boxing Day with the family, Hogmanay or a New Year's Day feast. We'd serve it with our Potato Dauphinoise, Honey Roasting Parsnips and plenty of Chef's gravy. And definitely put the whole Wellington on the table before you carve it. It deserves its moment.
